Monday - Tostadas (flat, crunchy, corn tortillas topped with refried beans; lean, ground taco beef; lettuce; tomato; and 2% mild cheddar cheese) and Spanish rice.
Tuesday - Chicken wraps (soft tortillas with grilled chicken, lettuce, tomato, and ranch dressing) and Sauteed Zucchini.
Wednesday - Grilled Italian Chicken Subs with boiled potatoes and/or red beans and rice.
Thursday - Kid's choice.
Friday - Penne pasta and meat sauce.
Two of my meals this week (Tuesday and Wednesday) are from my menu plan two weeks ago. My family loved them and asked for them again. They were so easy to prepare and low in fat, I couldn't say no! Plus, you'll see one of these dishes over at Our Krazy Kitchen on Wednesday!
